Scamorza is a stretched-curd cheese whose name comes from the verb scamozzare that means to take off a part. In faft, artisanal cheesemakers separate a piece of cheese from the rest, and they give it its typical pear-like shape. Then they tie scamorzas in pairs and hand them to dry. This pear-like shape can be obtained also by machinaires.
Ingredients: Whole cow’s milk, salt, rennet. Preservative free.
Organoleptic qualities: White cheese, with a mellow flavour of milk, without grooves.
